NO MAYO - Chicken Salad.

This is what I make for my SO and I, as it appeals to our tastes. (We HATE celery....)
But it's super easy to modify and EVERYONE'S salad is always different, anyways.

(4 Servings) EASY to take to work or school the next day!!

10z Shredded Chicken Breast

4oz Cucumber

5oz Grapes

3oz Apple

2oz Basil & Tomato Feta

1oz Romano Parmesan

5.3oz NONFAT GREEK YOGURT PLAIN

2oz Cashews

236 calories per serving!!! ((prior to bread/crackers))

Put it on a bread/cracker of choice or eat it straight from the bowl.

It’s freaking amazing!!!!

(I want to try making this vegan by switching out the chicken for tofu and doing something else with the cheese and yogurt. But I think at that point it will be a completely different thing.)

    What are the directions for this recipe? I am not use to recipes with "oz" :( I am still in the using cups and tsp stage lol. Also, how finely do you chop the veggies and fruit?

    I have NEVER liked chicken salad and definitely not a fan of mayo though I married a chicken salad lover (go figure lol) but in the past I have eaten modifed "salads" that have been made with yogurt or sour cream so I cant wait to try this :)

    I like to use hummus instead of mayo in chicken/tuna salad :) Yogurt sounds good too!

    I make chicken and tuna salad with greek yogurt now. I do love mayo, but this is honestly just as good. I haven't made this exact recipe, but I'm sure its the same.

    I used this chopper for the cashews. $4.97 at my store. http://www.walmart.com/ip/Mainstays-Food-Chopper/14964950
    I cut cucumbers into thin slices and then quartered those circles. I cut the grapes into 4 slices. The apple was sliced and then sliced smaller to the same sizes as the cucumber pieces. Everything was the same size when I got done. I just used a fork to shred up the baked chicken. It's all really done to taste. It's kinda like potluck. You do it how it works best for you.

    I think next time I make this, I'm adding blanched broccoli.
