What's for dinner?! 260 Cals Left

I'm on a very strict calorie diet [it's healthy, and it works 120%, for anyone concerned about the low calorie count]. I need some advice on what I should make for dinner, please! I have a huge craving for beef, asparagus, or some kind of simple broth. I'm a law student so I can't be standing in the kitchen over a hour.

    Eblakes, would that actually work?! I'm still learning to cook and such so anything off a bun is hard for me to know how to cook healthy. Any suggestions on a recipe?

    120% of the time for my mom and me, whierd. (: The 100% being for her and the 20% being for my lazy bum.

    Assuming you're not starving yourself... chicken breast or lean fish and veggies is close to 260 calories.

    I don't know what to suggest for your beef, but I like to saute asparagus in a pan with a very little bit of olive oil, and salt, pepper and chopped garlic to taste. Yummy!

    fire up grill. cut small piece of steak. place on grill with asparagus spears. cook. turn. cook. remove. season to taste.

    *edit* Frying pan idea is good too. Olive oil is nummy.

    This is what I'd do. Rub that steak with some seasoning and toss the asparagus with garlic and olive oil (if you can). Easy Peasy.

    If you don't have a grill, you can use the BROIL function on your oven. Get a close eye on it.

    I don't have a grill (life would be beyond perfect, though), so I'm very jealous of the grilling advice. I'll have to come back to it when I get trusted with one.

    Alton Brown said that a Broiler is just an upside-down grill ...

    I've heard many people say that portabello mushrooms are a good "steak" substitute - personally I love them and would take the mushroom over the steak any day. You can just pan fry in a little olive oil with salt and pepper.
