My calorie goal is approximately 2,000. Should I be meeting that 2,000, or does it matter if I'm under?

    It doesn't matter if you're under, but don't go under by 500+ every single day. A few hundred here and there isn't going to hurt you. Save those up for a splurge meal once a week and it will all even out.

    Since your deficit is pretty aggressive (1000 calories per day), I would highly recommend trying your very best to get as close to your calorie goal as possible.

    If you under eat by a few hundred today, plan to eat them the next day, you need the fuel for your body to run properly and not lose lean muscle mass.
