Rosemary garlic roasted potatoes

Scrub the potatoes.

Dice the potatoes. Large chunks are fine.

Take the fresh rosemary from the stem and give it a rough chop.

Mix all the ingredients together in a bowl. Use your hands.

Put it in a baking dish. Spread it so that it is one layer.

Put it in the oven at 400 degrees for 1 hour. Every 20 minutes flip the potatoes with a spatula or tongs for even roasting.

Pull it out of the oven. Has an awesome crisp texture on the skins.

    This is also REALLY good with brussel sprouts! Never tried it with the chipotle, but mmmmm that sounds awesome.

    It gives a nice slightly smokey, slightly peppery kick that I find really pleasant.

    Actually, yes. Lol. Roasted cauliflower is pretty awesome. Just add panko bread crumbs to the mixture to give it an awesome crunch.
