What can I do with black beans?

I love, Love, LOVE cowboy caviar (or Texas caviar). All sorts of recipes out there for it - here is but one. I prefer one where I make my own dressing and not use bottled Italian, but I couldn't locate that version. GREAT on tortilla chips or mixed into a salad, topping for other sandwiches or wraps. SOOOO yummy! And colorful and pretty!
1 (15.5 ounce) can black beans, drained
1 (15.5 ounce) can black-eyed peas, drained
1 (14.5 ounce) can diced tomatoes, drained
2 cups frozen corn kernels, thawed
1/2 medium onion, chopped
1/4 green bell pepper, finely chopped
1/2 cup chopped pickled jalapeno peppers
1/2 teaspoon garlic salt
1 cup Italian salad dressing
3/4 cup chopped cilantro
Directions
Mix beans, peas, tomatoes, corn, onion, bell pepper, and jalapeno peppers in a large bowl. Season with garlic salt. Add dressing and cilantro; toss to coat. Refrigerate for 20 minutes or until ready to serve.0 -

Black bean quesadillas. Chop up some peppers and onions and saute. Throw a tortilla in skillet on some melted butter, add some black beans, a bit of shredded cheese, and if you have the taste for it, I add a few bleu cheese or goat cheese crumbles (trust me) and voila!
If I'm too lazy to saute peppers and onions first I'll just add chunky salsa instead.0 -
Slow Cooker Chicken & Black Bean Soup
15 oz Black Beans
1 can of Rotel
2 Boneless Skinless Chicken Breasts
Cumin
Garlic Powder
Chili Powder
Oregano
(all spices to taste)
Cook in CrockPot for 2 hours on high... DELICIOUS!0 -

For black bean brownies -
Rinse and drain one can of black beans. Puree beans in a food processor. Mix the beans with one box of brownie mix. Pour into the pan as directed on the box and bake. They come out really moist and yummy!0 -
try Cuban Congri absolutely delicious, a staple dish in my latin culture so goodd..its simply black beans with white rice but cooked together ...there are a variety of techniques to make the dish but overall here is a good recipe:
1 5/8 slices bacon (optional)
1/2 tablespoon olive oil
1/2 cup chopped onions
1/3 cup chopped green bell peppers (about 1 medium)
7/8 garlic cloves, minced
1/2 tablespoon tomato paste
1/2 cup uncooked long-grain rice
1/3 teaspoon dried oregano
1/3 teaspoon cumin
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/4 bay leaf
7 (2 7/8 ounce) cans low sodium chicken broth (divided 6 to 1) or 7 (2 7/8 ounce) cans low sodium vegetable broth (divided 6 to 1)
3 (3 1/4 ounce) cans red beans, rinsed and drained
1/4 to taste sliced green onion (optional)
1/4 to taste chopped fresh fine parsley (optional)
Directions:

Cook bacon in a Dutch oven over medium heat until crisp.

Remove bacon from pan, reserving 1 tablespoon drippings in pan, crumble bacon, and set aside on paper towel to drain.

Add oil to pan.

Add onion and bell pepper; sauté over medium-high heat 4 minutes or until onion is tender.

Add garlic; sauté 1 minute or just until garlic begins to brown.

Add tomato paste; cook 1 minute, stirring constantly.

Add rice, oregano, cumin, salt, and black pepper; cook 2 minutes, stirring constantly.

Place reserved bacon and bay leaf in pan; stir in 6 cans of broth and bring to a boil.

Cover, reduce heat and simmer 20 minutes or until rice is tender.

Remove from heat; discard bay leaf.

Stir in remaining can of broth and beans.

Cook 5 minutes over low heat or until heated through, stirring frquently, but carefully.

Garnish with green onions, if desired or/and parsley, if desired.

Oh my gosh!! My friend Mike makes these black bean burgers in the oven.
He uses NO oil but i brush mine with a little oil on both sides.
Its just black beans, ketchup and onion all in the food processor/blender
then form thick patties and bake until hot inside crisp outside.
Don't try lifting or turning until they have crust on outside.
so....maybe 350 degrees for 25 minutes or more?
I have used salsa instead of onion and ketchup and if i cant get a patty
i have added a tiny bit of breadcrumbs and garlic powder is good too.Also good as mini ball shapes.

If you like green salad, then use them in a green salad (ditto for garbanzo or red beans).
Also, a good addition to a three-beam salad.0
