Crock pot!

I'm a super busy single mom of two little boys (3 and 5 years old)and my crock pot is my best friend! Anyone have a good kid-friendly and healthy recipe I can try out?

  • Salsa Chicken. I use a combo of boneless skinless chicken thighs and chicken tenders and a half jar of Pace Picante salsa. Let it cook 6-8 hours on low then shred the chicken. You can use it for tacos or grilled burritos or mix it with pasta. My grandsons who are 10 and 7 love Salsa Chicken.

    Turkey and veggie soup

    Sauté some onions then
    Brown ground turkey seasoned with salt and pepper to taste
    Drain and put in crock pot with 2 cans of chicken broth, bag of frozen mixes veggies, Italian seasoning and some cayenne pepper if you like to spicy it up.

    Sometimes I add some wheat pasta (cooked and drained on the side) when I serve it.

    Pulled chicken breast or pork. Its high in protein and low in fat. Have it on whole wheat slider buns. Delish! Here's a recipe:

    I make "chicken burrito soup" in the crockpot, it's best served with sour cream, cheese, and tortillas, BUT i've been eating it without all the high-calorie toppings and it's still very tasty:

    1 lb meat - I'm on a budget, so I usually use skinless chicken thighs
    1 medium onion, diced
    1 large can diced tomatoes
    1 can corn, drained
    1 can black beans, drained
    1/2 cup dry rice
    3 cloves garlic or garlic powder
    1 tbsp cumin
    1 tbsp chili powder
    1 chipotle pepper, chopped (you can omit for the kiddies)

    It's a great fridge-cleaning type recipe, you can add whatever vegetables you have on hand or swap the protein (it's great with pork), and the counts on it are great for me. For 1/6 of the recipe:

    269 cals
    3 g fat
    22 mg cholesterol
    422 mg sodium
    44 g carbs
    7 g fiber
    18 g protein

    I enjoy turkey chili in the crockpot. love to put peppers, mushrooms, onions, light and dark kidney beans, one can of tomato sauce (i use kirkland organic), one can of stewed or diced tomatos (low sodium), chili seasoning (your choice of brand), chili powder and hot sauce to taste.

    I made a delicious crock pot veggie bean soup today, modified from a pasta fagioli recipe I'd found. I left the pasta out, added more beans and substituted Jennie-o Italian seasoned ground turkey for ground beef:

    1 package Jennie-o Italian seasoned ground turkey
    4 cups beef stock
    3 carrots- sliced
    1 cup chopped celery
    1 cup chopped cabbage
    1 can red kidney beans (drained)
    1 can cannelloni beans (drained)
    1 can of Simple Organics tri bean blend (drained)
    2 cans Hunts chopped tomatoes with garlic, basil (14.5 oz cans)
    1 jar Paul Newman Sockerooni pasta sauce
    1 onion chopped
    5 tsp chopped parsley
    2 tsp black pepper
    3 tsp oregano
    1 tsp tabasco sauce

    Brown the meat and drain fat. Add to crockpot with all of the other ingredients and cook on low for 8 hours.

    I don't have kids so it's not kid tested but I can say that my husband LOVED it!

    Per the calorie calculator, 1.5 cups = 229 calories.
