Pumpkin Spice Protein muffins

Ok, so I have made many things with protein powder but they are usually super dense and while I still enjoy them, they don't taste anything like normal baked goods lol .... Until now! I think I'm finally getting better at this lol, although this time I cheated and used a boxed mix as a base, but it was worth it! These pumpkin spice muffins came out fluffy and rose wonderfully like normal muffins with awesome awesome flavor.

You need:

1 box of Duncan Hines spice cake mix (just the dry mix)
1 cup pure pumpkin ( I used Libby's pure pumpkin)
6 egg whites
3 scoops 90 cal protein powder (I used Garden of Life Raw Protein Powder in vanilla)
1/2 cup of water

Mix everything together in a bowl, I mixed by hand because I've found in the past that electric mixers do too good of a job on muffins and that can make them heavy.

I sprinkled cinnamon lightly on top of each muffin, next time maybe I'll try some shaved almonds or something on top.

Bake at 350 for 18 minutes, I used a metal muffin tin, I think the box says to bake at 325 in a glass pan and I did fine following the temp instructions on the box even though I changed the ingredients obviously :)

The nutrition here is for 18 muffins, they come out very normal muffin tin size, not skimpy at all lol

    How is the consistency of these? Are they light or heavy? I made the recipe that has been floating around FB which is a box cake mix and a can of pumpkin, that's it, no water or egg whites. I did add protein powder and used a sugar free cake mix. Added some pumpkin pie spice as well. Flavor was good but consistency was horrible. They were like hockey pucks. Ate one fresh out of the oven and tossed out the rest the next day. I think your recipe may be better. I think I would use mixer on the egg whites and then fold them into the other mixed ingredients, might get a lighter muffin. What do you think?

    These came out really light and fluffy for me, not heavy at all, if anything they are more light like typical boxed cake than like muffin consistency, I was amazed at how light they were and I think it is indeed the egg whites, whipping the whites and then folding in might make them even lighter but they aren't heavy at all, that's what got me excited because I also have been eating a lot of hockey puck style protein baked goods lol - and they're a lot healthier with egg whites in there, and protein powder ect. than they would be with the Pinterest version I saw that just had pumpkin and cake mix, that one didn't interest me because it was so high carb with virtually no protein, this way you get a much better balance of nutrients. :)

  • Do you happen to know the fiber content? I do believe pumpkin is high in fiber which would help bring down the carbs even more :) I do believe I am going to make these today! would be great with low fat sugar free PSL
