I'm slowly gaining weight back, help?

So I started MFP on Saturday, 9/6/13, weighing in at 200lbs. From 9/6 - 9/14 I lost a total of 4lbs following my diet which is eating healthy, and drinking only water (I'm not exercising as of right now, just dieting). I weigh myself everyday to keep track and progress on what I'm doing right or wrong. My schedule is different from everybody else, I work graveyard. I work from 11pm - 7 am in the morning, so basically I only eat breakfast at 9pm, snacks in between, lunch at 3am, and once I get off of work at 7am, I go straight to sleep, so basically only eat 2 meals a day, I'm still full from my lunch so I skip "dinner", and on top of that, I don't want to eat at 7am in the morning once I get off of work because I'm so sleepy and I don't want to sleep with a full stomach. Yesterday, I weighed myself and I gained 1 pound, how?!? I ate healthy and everything, then today 9/15/13, I weight myself again, and I gained another pound, I'm now back at 199lbs, how!?! I worked so hard and I didn't even cheat! There's pizza right now at the table and I'm not even in the mood for that

One pound is a fluctuation. I'm not sure you can call it a weight gain yet.
In order for this to work, you likely have to work out. It will make you sleep better, feel better and work out some stress. Even if it's only a 15 minute walk...it will be great for you. As for meals --- that's kind of up to you. Everyone should have some meal at the start of the day, the middle, a snack and then dinner.
Can you perhaps do a 15 minute walk when you get home and then eat a light dinner? It might help you wind down the day. If not, think about incorporating it into the breakfast meal.0 -
I've only lost 11 lbs so I'm hardly pro enough to answer you, however I have been reading and reading and reading (not diet books though).
From what I've read:
Weight comes and goes throughout the day - as much as 4 or 5 pounds. It's food, water, poop, and whatever else the body is deciding to do at the moment. It's best to weight yourself once a week at the most - and do that at the same time of day.
If you're expending more calories than you're taking in, then you're going to be losing weight over the long run - just not perhaps visually from one day to the next - or even within the same day! (I saw myself gain 2 pounds between 8 am and 11 am last week)0 -

I also work night shift 10pm-8am, or 8pm-8am so I'm with you on that one. What are you doing food intake wise on your days off? Are you doing a daily or a weekly calorie allowance? Like other posters stated it's just a flux in weight. It's better to take measurements than rely on the scales. Don't get disheartened.0 -
I'm doing a daily calorie allowance, and I still stick with my diet on my days off which confused me on why I was gaining weight lol0

Like others said - no worries. You are on the right track. Keep up with a moderate calorie deficit, and you will lose fat as your body turns to draw stored energy from fat cells (rather than from what you ate). Think of it as every time you feel a bit of hunger and decide not to eat - you are burning fat! Be patient.
I do not think when you are eating is a problem - it sounds like you are fine there, too.0
