Cookie in a Cup

Had some people ask me about this mysterious “Cookie in a cup” recipe I have on my food diary every other day. It’s the perfect amount of sweetness I NEED a couple times a week, and instead of an entire box of cookies this is a great alternative single serving size.

Well…figured I’d share.

That website also has links to other recipes for single serve deserts in mugs. Haven’t adjusted the rest of them to gluten free yet, so I haven’t tried them!


Gluten Free Cookie In a Cup:

2.5 tablespoons of Red Mills All Purpose Baking Flour
1 tablespoon densely packed brown sugar
1 tablespoon (or 1/2) of granulated white sugar
1-2 tablespoons of chocolate chips (depends on the size, and amount of chocolate you want. i substitute raisins sometimes)
1 tablespoon soft to melted butter (I substitute low fat margarine.
1 egg yolk (Not sure how egg replacers would do)
1/2 teaspooon vanilla extract
pinch of salt (I leave this out most of the time)

Mix everything together, pop in the microwave for 45-60 seconds on high.
Let sit for 30 seconds.

Enjoy your single cookie!

    Doesn't having flour in it mean there will be gluten in it?

    If you use GLUTEN FREE FLOURS such as tapioca flour, almond flour, or rice flour there is NO WHEAT in it.

    You can make it with either regular flour or with gluten free flours. :]

    And the calorie/nutrition stuff will depend on the brand of everything you use, most of those ingredients aren’t standard in nutrition (especially chocolate chips and flours)

    That does not sound too bad calorie wise with the exception of the TBSP of butter. Will have to try it with a low calorie butter/margarine. Thanks for sharing I am drooling!

    I went to the website you posted & found out that this cookie made as you posted is 475 calories, way to many for my calorie count. Maybe it can be revamped to be lower calorie ??

    Oh you definitely can make it healthier!
    I use lower calorie butter substitutes that make it around 330 calories a serving, and that’s with my super charged gluten free flour. I even found a brand of chocolate chips that are mini sized and lower calorie, I find the increased surface area of the smaller chip yields a more chocolaty flavor but actually ends up cutting off around 40 calories! :]

    Regular flour has even less calories, so I would think you could make it as little as 300 a serving.

    And yes, that’s a chunk of calories. But hey, it’s a homemade desert that is basically cookie/cake.
