Super Protein Frittata (or quiche without crust)

Just thought I would share my latest breakfast creation.

Base: 6 eggs (4y/2w) and 100 grams cottage cheese, fresh herbs.
then you can add in what ever you like:
last week: grated zuchinni and chopped sundried tomato, chilli
this week: chorizo and goats cheese.
next week: whatever is left over in fridge and goats cheese (i love goats cheese)

Makes 4 giant serves that come in under 200 calories per slice

Mix together and cook for about 30 minutes in the oven or until non-gooey in greased pan.

    Very similar to a recipe I use...

    BASE:
    -8 whole eggs
    -1/3C milk

    Whisk together then throw in whatever you want.

    Italian: basil, tomatoes, parmesan, pancetta
    Mexican: chorizo, peppers, cheddar, green chilis

    Pour it all into a well greased 9in round pan and bake at 350 for 20-25min. Cut into 4 wedges at around 200cal each.

    Possibilities are endless. Great way to get rid of any left over veggies.

    Good if your not a fan of cottage cheese as you cannot really taste it and it ups the protein.
