Leek Recipes?

I bought 2 huge leeks the other day. One I'm using in dinner tonight and I don't know what do to with the other...

I make a Loaded Baked Potato Soup, would leeks go well in this?

Any other ideas, let me know! Never cooked with them before.

    Yes, the leeks will go PERFECTLY in a potato soup. They were made for each other :smile:

    You can also use leeks anywhere you'd like a milder onion-y flavor. Like, maybe an omlette with other veggies?

    I have a friend who makes Leek Soup a lot, and loves it. I can't find his recipe at the moment, though. Google Leek Soup, and the top recipe is Potato and Leek Soup from Emeril.

    I'm sure it's not low fat or low cal, so it'll take some creative substitutions. ;-) I love loaded baked potato soup, but haven't had it in a long time...the best one had some finely chopped green onions on top, so the leeks will definitely taste good in there.

    if you go to cookinglight.com and search "goat stuffed chicken"...the goat cheese has sauteed leeks in it...very good

    I use Leeks in a Zucchini pie instead of onions, it gives it a really nice taste
