I have a friend who makes Leek Soup a lot, and loves it. I can't find his recipe at the moment, though. Google Leek Soup, and the top recipe is Potato and Leek Soup from Emeril.

I'm sure it's not low fat or low cal, so it'll take some creative substitutions. ;-) I love loaded baked potato soup, but haven't had it in a long time...the best one had some finely chopped green onions on top, so the leeks will definitely taste good in there.0 -
if you go to cookinglight.com and search "goat stuffed chicken"...the goat cheese has sauteed leeks in it...very good0

I use Leeks in a Zucchini pie instead of onions, it gives it a really nice taste0
