Hey everyone! I don't know about you, but I'm ALWAYS looking for fresh, new ideas of good food. I get bored easily and it can be a struggle sometimes (most of you know exactly what I'm refering to!) I subscribe to Cooking Light magazine (which I highly recommend) and they had an awesome article in the Sept. isse. 7 different combinations of Nacho recipes!! I wanted to share with you 5 of the 7 that look amazing! I haven't tried any yet, but I intend on doing so ASAP. 325 Calorie Nacho Combos

*Start with 4 oz whole-grain tortilla chips on a baking pan. Top with cheese and meat; broil 3 mins or until cheese melts. Add remaining toppings. All recipes serve 4.

BBQ Chicken and Cheese
8 oz shredded rotisserie chicken breast
¼ cup lower-sodium bbq sauce
½ cup chopped green onion
½ cup shredded reduced-fat Monterey Jack cheese
1 cup prepared cole slaw

Greek-Style Crunch
4 oz crumbled feta cheese
3 oz thinly sliced kalamata olives
1 cup chopped tomatoes
½ cup 2% reduced-fat Greek yogurt
¼ cup finely chopped fresh basil
½ cup organic canned chickpeas

Huevos Nachos
½ cup crumbled queso fresco
¾ cup rinsed and drained organic canned black beans
¼ cup pico de gallo
3 oz chopped chicken chorizo sausage
4 scrambled large eggs

Shrimp and Avo-Nachos
8 oz chopped grilled shrimp
2 Tbsp Mexican crema
¼ cup cilantro
¼ cup toasted unsweetened coconut
¾ cup sliced peeled avocado
½ cup fresh salsa

Flank Steak Fajita
8 oz thinly sliced seared flank steak
½ cup shredded reduced-fat Monterey Jack cheese
1 cup chopped red bell peppers and onions
1 cup baby arugula
½ cup chopped tomato
