My amazing new breakfast pancake recipe!

I have discovered this way of making pancakes that satisfies my longing for carbs/wheat in a morning without having much in them.

Makes two big pancakes (yes, I eat them both):

I egg
I egg white
1/2 a banana
tablespoon of ground almonds
tiny pinch of salt
few drops of vanilla essence and/or sprinkle of cinnamon

Whizz it all up in a blender, then pour into a hot pan (either non-stick if you're fat cutting, though I smear with coconut oil). Swirl round the pan until set on top then flip or turn and cook other side, like normal pancakes (these are English rather than American style pancakes)

I serve with a blob of 0%fat Greek Yoghurt and some fresh blueberries but they would go with most fruit or even some lean grilled bacon!

    Thanks for sharing! Here are a few that I like too =D

    Protein Pancakes
    Ingredients:
    1/3 cup rolled oats
    1 scoop vanilla protein powder
    1 ripe banana
    1/3 cup liquid egg whites
    1/2 tsp baking powder

    Directions:
    In a bowl, mix together ingredients.
    Preheat a skillet (medium-low heat), spray with non-stick spray, and pour in half of the batter while shaping it into a pancake with a spoon.
    Heat until partially cooked and flip pancake.
    Once cooked through, top with syrup, nut butter, fresh fruit or anything else your heart desires.


    Pumpkin Spice Protein Pancake
    1/4 cup rolled oats
    1/2 cup liquid egg whites
    1/4 cup canned pumpkin
    1 tbsp ground flaxseed meal
    1/4 tsp baking powder
    Cinnamon and pumpkin pie spice
    Directions:
    In a bowl, mix together ingredients.
    Preheat a skillet (medium-low heat), spray with non-stick spray, and pour in half of the batter while shaping it into a pancake with a spoon.
    Heat until partially cooked and flip pancake.
    Once cooked through, top with syrup, almond or peanut butter, or chia seeds

    Nope. No flour needed (the ground almonds work as a binder) making them great for low carb and gluten free diets! You won't even notice the flour missing (these are more European-style 'crepes' than American pancakes).

    I've added the recipe to the database as Emma's low-carb pancakes if anyone wants the calories and nutrition.
