Switching off of Atkins

Hey guys
I've been doing Atkins for about 4 weeks now and I'd like to transition into more of a healthy, low calorie and low carb diet. I've done a lot of reading about going off the diet and mostly they are horror stories but they seem to be because the people couldn't stick to the new diet. Has anyone switched to a new diet and stuck to it? How did it go?
My biggest problem was bread and pasta, but I've phased out of that. I'd already switched to brown rice and whole grain breads, even started using whole grain English muffins to make sandwiches to trim the carbs/calories/size. I can handle not eating pasta but when my brother makes his traditional pasta dinner over the holidays I'd like to participate with the family. So it won't be often, but I do want that option if I can have it.
I also started to cook vegetarian food this year and I'd like to continue with that. I can make a good vegetarian chili that doesn't fly with Atkins but I'd like to have that in my diet. It's not a huge amount of carbs and I get good tofu content.
For about a year I'd been using Almond milk and I've never been much of a caffeine/carb drinker since I've always had black coffee to cut out the calories and I only drink sodas like caffeine free Diet Coke or water. So those things won't be a danger. Atkins has also helped me cook more fish and I can make a pretty good baked salmon now.
So....I think I've pieced together enough information to create a good diet that's lowish carb, protein from fish and tofu, lots of salads, and no calorie drinking. I have some momentum for that kind of eating and I want to give it a shot and it incorporates some of Atkins. I'll probably start eating some oyster crackers (yummmm) little by little each day while restricting calories with salads to transition off. Hope it works....

I don't understand what you're eating now - calories, carbs, protein, fats per day ??
The atkins plan has 4 phases (see website) and I would think what you describe easily fits into the later 2 phases, but I'm not that clear where you are or where you want to get to.0 -
I'm currently following Atkins, finishing up week 4.
What I want is something that allows for more leeway in social situations or special occasions, provided that I stick to a regular diet between those events. This was actually caused by an accident a couple of nights ago where I drank some Black Russian. I'm not a big drinker and I assumed it was carb free like whiskey/vodka but it threw me off the diet.
I've learned a lot about healthier cooking over the past few months (fish, vegetarian dishes) so I want to put that to work for me, which is to say that I'm not going to go back to my old eating habits. When I read about people going off of Atkins most say it didn't work, but 95% of the time it's because they went back to eating carbs or binge eating. I wanted to know the results of people who went off the diet but actually succeeded in sticking to the new diet because that's what I want to do.
