Parsnips?

I'm looking for some different ways to cook parsnips. The only way we've ever made them is peeled, steamed, and drzzled with maple syrup. Anyone have any yummy parsnip recipes? Thanks!!

    Roasted like potatoes. I usually like to mix several root veggies together like parsnips, turnips, and carrots or something...roast those up in some olive oil, onion, and garlic...little salt and pepper and you're golden.

    I like to roast them with other root vegetables, as the previous poster described, but I have had a nice pear and parsnip soup. An Internet search would probably yield a good recipe.

    They make a lovely soup if you mix them with potatoes. Add thyme and as much blue cheese as your calories allow.

    Roasted with carrots, green onions, a dash of olive oil, thyme, garlic, salt and pepper. I can eat the whole pan!

    My grandmother used to put them in with a pot roast along with potatoes, carrots and turnips.

    PARSNIP APPLE SMOOTHIE
    -2 medium parsnips cut in small chunks
    -1 cup of cold apple juice
    -1 large red delicious apple
    -1 Tablespoon of honey
    -1 teaspoon of chia seed for your Omega 3s or ground flax seeds

    PARSNIP GREEN SMOOTHIE
    · 1 parsnip, peeled
    · 1 cup watercress
    · 3 carrots, peeled
    · 2 cups purified water

    Roast with a honey glaze and sprinkled with sesame seeds.
