What do you call it?

It depends. Queso has some sort of chili or spice in it. Cheese dip is what they put on nachos at the ballgame.

I live in New Mexico...it's queso.It depends. Queso has some sort of chili or spice in it.
Queso is just spanish for cheese...no chiles required. I get all kinds of stuff con queso...sometimes with chiles, sometimes no.I'm a fan of queso myself. Mmmmmm.... Velveta and Rotel!

I usually call it "nacho cheese" as "queso" is an actual type of cheese that is NOT the typical "nacho cheese" and "cheese dip" just implies gooey cheese with no spicy goodness.

So you do know that Queso just means "cheese" in spanish? It doesn't actually refer to "cheese dip with peppers" like most americans believe.
Just like Salsa just means "sauce" in spanish. You can have all kinds of salsa that isn't pace picante.
