Beef Stroganoff

This is a lower fat, higher protein, easier version of this dish and my family thinks it's just as good as the "real" version ;)

****ake (or your favorite variety) Mushrooms, 3 oz package sliced
Beef - Ground, 85% lean meat / 15% fat (go for the leaner stuff by all means if you prefer)
No Yolks Broad Egg Noodles, 8 oz package
Greek Yogurt Plain Non-fat, 1 Cup
Progresso - Recipe Starters Cooking Sauce - Creamy Portabella Mushroom, 1 cup
Onions - Raw, 0.25 cup, chopped
Minced Garlic, 1 tbsp
Salt and Pepper to taste

Cook noodles according to package directions
Cook ground beef, mushrooms, onions and garlic in a pan until ground beef is browned and onions are translucent.
Reduce heat to medium. Add Portabella mushroom sauce and greek yogurt and cook stirring frequently until heated through.
Add salt and pepper to taste. Serve over cooked noodles.

    I'm going to try this with a chopped up veggie burger pattie, and the french onion oikos dip!
  • I do something very similar to this but I use 93% lean ground beef - make my own gravy from a brown gravy mix with fat free sour cream adding chives and parsley and I use tons of fresh mushrooms.
