    Try these from skinnytaste.com. I made them and both myself and my husband liked them. I did use a canned sauce instead of the recipe's since I was in a hurry but will be making them again.

    I love enchiladas. I just buy mine from the butcher or make a packet version & just allow for the calories, sodium etc. Yummo! I hope you find a good recipe.

    Thanks for the suggestions. :) I love tacos but looking for something with a little more depth/sauce/taste.

    I make my own sauce with a handful of various dried chiles, guajillo/ancho/new mexico/chipotle. I de-stem and seed them, toast them on a warm skillet, then tear and toss into the blender with a garlic clove, oregano, and cumin, then pour over boiling water/chicken stock and cover. They sit there for about 30 minutes then blitz till smooth.

    I make mine with chicken, green chile, some pepper jack, and cheddar, with some green enchilada sauce on top.
