Ideas for veggie dinner with lot of protein

I'm not sure if you eat fish or not, but I love a tossed salad with tuna in it instead of chicken for lunch. Fresh lettuce, tomato, carrots, cucumber, some cheese, and a can of drained tuna with some dressing. The tuna adds to an otherwise blah salad and the protein stays with you.0

I guess it would be dependent on what your idea of a "lot of protein" is...pretty much not going to get what I would consider "a lot of protein" in a veg dish. I guess you could do something with some tofu or other soy product and that would be decent, but nothing remotely close to say, a serving of chicken.
Also, pretty hard to do veggie and "low carb"...veggies are all carbs.0
