Easy sugar free pumpkin dessert recipe?
My mom is visiting for Halloween and has never had any pumpkin stuff, except soup, so I wanted to try to make some kind of pumpkin dessert. She's diabetic although stevia is fine. Any recommendation? It needs to be easy, I'm not so good at baking with a lot of ingredients, lol.

Sugar-Free Instant Pumpkin Pudding
Ingredients:
•1 15-16 oz can pumpkin
•2 cups unsweetened soy milk
•1½ teaspoons cinnamon
•¼ teaspoon nutmeg
•¼ teaspoon ginger
•1 box instant (no-cook) sugar-free butterscotch or vanilla pudding, 6 serving size
•If using butterscotch, add 1 teaspoon vanilla
Preparation:
In a medium bowl, whisk together the pumpkin, spices, and half the milk. While whisking, add the pudding mix and the rest of the milk. Whisk well to fully combine. (You can also use a stick blender.) The pudding will continue to thicken a little over time. You can add more liquid and/or spices for the consistency and flavor you prefer.
Serving Suggestion: Top with toasted pecans.
Makes 8 half-cup servings.

These recipes are very popular on MFP boards this time of year. Just a note, I am sure you could use the brown sugar Splenda in the cream cheese frosting for the pumpkin cupcakes.
I have made both of these recipes and really liked them.

Edited to say I am sorry, the cupcakes use a regular cake mix, maybe a sugar free mix would work equally well. Also adding a Jamie Eason pumpkin protein bar recipe. Awesome!

I don't like to spend time in the kitchen, so these are all pretty simple.
