make ahead and grab

Hello Everyone,

I am looking for make ahead grab and go food. Does not need to be easy as I love to cook. Please include nutrition information with recipe or idea. I have a beef and veggie soup and turkey chili that I am making over the weekend for lunches. Breakfast ideas would be great.

  • Everything Breakfast Bars are a favorite at our house.

    2 c. quick oats
    1/2 t. baking powder
    1/2 t. salt
    1/2 t. ground cinnamon
    1/4 c. raisins
    1/4 c. chocolate chips (I use Nestle mini)
    1 egg (or 3T Egg Beaters)
    1/2 c. canned pumpkin
    1/2 c. fat free milk
    1 1/2 t. maple syrup
    1/4 c. brown sugar
    1/2 c. white sugar
    1 1/2 t. vanilla extract

    Preheat oven to 325*F and grease an 8x8 pan.
    In one bowl combine dry ingredients, in another combine wet ingredients.
    Mix together until just combined and pour into the greased pan.
    Bake for 30 minutes. Cool. Cut. Enjoy :)
    I cut them into 12 bars.

    The calorie count is 147 per bar according to my calculations with the specific ingredients I use.

    Egg McMuffins

    Grease a 12 part cupcake pan with cooking spray.
    Crack an egg into each part.
    Bake at 350 for 15 minutes.
    You get perfectly shaped, perfectly freezable egg patties :)

    Put an egg Patty on a whole grain English muffin and add a slice of low-fat American.
