    Off the subject of recipes...but I keep seeing "bump" on different posts....what is 'bump'?

    Canned salmon salad

    It’s not because it comes from a can that you can’t prepare something really delicious out of canned salmon. After all, we are fortunate enough that farmed salmon doesn’t hold well to the canning process so we are blessed with an easy and cheap source of wild salmon your-round. In this recipe, I use olive oil and lemon juice, but homemade mayonnaise are also excellent.

    Ingredients
    •2 cans wild salmon;
    •2 diced cucumbers, peeled or not;
    •1 chopped onion;
    •1 large diced tomato;
    •1 diced avocado;
    •5-6 tbsp extra virgin olive oil;
    •Juice of 2 lemons;
    •2 tbsp chopped fresh dill, optional;
    •Lettuce leaves for serving;

    Preparation
    1.Drain the liquid from the canned salmon, place the salmon in a bowl and mash well with a fork.
    2.Add the lemon juice and olive oil and mix well into the salmon.
    3.Add the cucumbers, onion, tomato and avocado and mix again.
    4.Add the dill, if using, season with salt and pepper and serve the cold salad over lettuce leaves.
    This is one of my favorites, too. I leave off the tomatoes and sometimes use homemade paleo mayo from Well Fed with a little dill for dressing.

    sausage hash: Combine 1 chopped red pepper, 1 chopped yellow pepper, 1 onion, 2 or 3 cooked sausages, and some sweet or reg potatoes with olive oil and mrs dash and bake in oven at 350 for an hour.

    Chicken Balsamico w potatoes: 6 med potatos, quartered, 8 strips bacon, cut into pieces, 4 bonesless skinless chicken breasts, 8 gloves garlic, chopped, 1c balsamic vinegar, 1/2c broth. Put potatoes in slow cooker, cover with chicken, and everything else and cook low 5-6 hours

    Hobo pork chops: 4 pork chops, 2 carrots, chopped, 2 zucchini, chopped, 1 onion chopped, 8tbs concentrated cream of chicken soup. Cut 4 12 inch squares on aluminum foil, season pork chops with mrs dash put in center of foil, top each chop with 2tbs soup and a quarter of the veggies. seal the seams and cook 400 for 45-50min in oven.

    just found out about paleo recently - doing lots of research, keen to get started seriously. There are some really nice recipes here - definitely going to give them a try :smile: I found a great collection of recipes at www.paleocookingtips.com - but you also get an 8 week meal plan and a few other things which I found really helpful
