Any kind of Indian curry! Get a mix of it, cook it up with chicken, pour over some basmati rice.

    Oven Fried Chicken
    2/3 cup Bisquick
    2 T paprika
    1/8-1/4 t. salt
    1 t parsley.
4 chicken boneless skinless breast halves.
Mix all together. Coat all sides of chicken. Melt 1-2T butter in a 9x9pan, add coated chicken. Bake 40 min @ 375. Flip chicken w/spatula and cook another 15-20 min.

    Breast Cutlets
Pound to an even height, about a 1/2 inch, w/ kitchen mallet. Dredge through flour on all sides.beat an egg and add 1-2 t of h2o. After flouring, coat with egg mixture, then dredge through bread crumbs seasoned how you like it. (I prefer thyme and S&P). Lightly fry in a small amount of oil in a pan (1/4 inch deep or less?) When nicely browned and not sticking, repeat on other side. Can serve 101 different ways - over noodles w/pasta sauce (red or white), alongside potatoes or tortellini, sliced on a salad, etc.

    Shredded BBQ Sandwhich
In a deep frying pan or saucepot, boil frozen chicken breast until thoroughly cooked. Remove, shred w/2 forks, add bbq sauce of your choice, put on a bun - done!

    - Take 3 chicken breasts and a jar or two of your favorite salsa. Cook on low for several hours and then serve over brown rice and a side of steamed green beans.

    - Roast in the oven with garlic, onion, and chili powder until done.

    - Roast in the oven with a little balsamic vinegar and a little honey or sweetener

    - Roast in the oven with a little mustard and honey

Mix 1 cup of low fat honey mustard dressing with 1 tsp of dried dill.
Crunch up corn flakes (or use prepared corn flake crumbs).
Pour about half the dressing into a little bowl and reserve the other half.
Dip the chicken breasts into the dressing, then in the corn flake crumbs.
Bake at 350 for about 45 minutes (varies depending on big the chicken breasts are).
Heat the reserved dressing and drizzle over cooked chicken as a sauce.

    FABULOUS.

Tonight we are having "Crock Pot Creamy Italian Chicken" (I don't know if that's really what it is called, I got the recipe from my MIL).

    2-3lbs chicken breasts
1 package reduced fat cream cheese
1 can cream of chicken soup.
2 packages Italian dressing dry mix.

Crock pot it 8 hrs on low, or 4 on high. Serve over rice or noodles. About 400 calories a serving including the rice.

Try boneless, skinless thighs ... only 3 more calories per ounce (raw weight, 33 cals per ounce) than chicken breast (30 cals per ounce raw weight) ... but SO much more flavor ...

I pan fry mine with a little Pam, seasoned salt and pepper, then top with franks red hot and some shredded cheese (about 1/2 a serving). It's 300 cal, give or take a few and I can make it hotter or a little cheesier depending on my mood. I usually make some rice and then dip in low cal ranch dressing.

-marinate in apple cider, onion powder, garlic powder, sea salt and black pepper (I do overnight), pound thin just before grilling (or grill pan). serve with brown/wild rice and broccoli or salad (or on a salad with a mustard vinaigrette)

    - cut each breast in half, pound to an even thickness (without smashing to bits!) and marinate 15 -30 minutes in FRESH lemon juice, minced garlic, sea salt, thyme and celery seed. Grill (or grill pan). Serve with roasted root veggies and roasted rosemary potatoes.

Chicken marinated in tequila, a little bit of sweet (like agave), lemon juice and chili powder can be very nice on the grill.

Chicken cooked with sage and lemon served with couscous is very nice, a light middle-eastern variation.

saute small diced pieces of chicken breast with any veggies that you have on hand. add the cooked quinoa and some soy sauce. you can also throw in an egg in there if you're really hungry.

    chicken fajita tacos
warm up some onion slices, bell pepper slices on a pan with some olive oil and eat with organic corn tortillas. eat with whatever salsa you have on hand, i like mine with just some lime juice.

    chicken pesto pasta
whole wheat pasta, veggies of your choice, homemade pesto sauce.

I only cook with boneless skinless chicken breasts, no hassle or mess.

    Fiesta Chicken:
    -Chicken breast
    -Spanish Rice
    -Small jar of Salsa
Cut up chicken into small cubes, cook on medium in a pan until white all the way through. Add your salsa and let it simmer with the chicken until hot. In the meantime, cook the spanish rice according to directions.
When done top the rice with the salsa chicken.
You can add a bit of sour cream or shredded cheese on top.
(This is one of my fav's)

    Chicken Ceaser Salad:
    -Chicken Breast
    -Romaine Lettuce
-50% Less Fat Renee's mighty ceaser dressing
    -Seasoning and bread crumbs
Cut chicken into small cubes, coat with a small amount of olive oil. Put the seasoning (whatever you like) and bread crumbs into a big zip lock bag with chicken and shake around until the chicken is coated. Put in the oven until cooked - I put it in at 350F, about half hour.
Cut up the romaine lettuce (and wash), add the ceaser dressing. When chicken is cooked add to the top of the salad.
(My family requests this at least once a week, sometimes twice a week)

I am trying a crockpot chicken tonight. Chicken breast with mango salsa on top.
  • My almost famous margarita chicken

I filet out the breast so it is thinner and then cut in half (so each breast will be 4 pieces when done). By cutting into smaller pieces, it allows you better control when grilling and makes it easier to keep them from drying out. I marinade for at least 3 or 4 hours, but preferably overnight and then cook on the grill.

    Marinade:
    tequila
    fresh lime juice
    fresh cilantro
    salt
    pepper
    olive oil

ok so i love chicken!!! always have! But im needing new ideas how to make boneless skinless chicken breast!!! what are some of your favorite recipes?

my mom cooks boneless chicken breasts in SODA (pick your flavor) on the stove. turn the heat low, and let it simmer till it's done.

however, this weekend I'm going to be making some Southwest Stuffed Chicken breasts -- slice them almost in half, stuff them with a piece of cheddar cheese (or vegan cheese for less calories), stuff a few slices of red/orange/yellow pepper in there, squeeze it shut, then wrap 1-2 pieces of uncooked bacon around it (use a toothpick to hold shut if necessary). then bake it until it's done! yummy "cheat" meal for the weekend, while still being someone healthy (depending on what kind of cheese and bacon you use).

There is nothing wrong with bisquick if it fits your calorie goals / macros for the day :noway:

(really just tagging in for the margarita chicken recipe:bigsmile: )

Dip them in Dijon mustard with a little honey added, then dip them in honey mustard pretzel crumbs and bake as usual.
Simmer them in marinara sauce, homemade or jarred, and serve them with linguini or couscous
Chop a breast into cubes and make chicken salad using Laughing Cow Light cheese as a binder - 1 or 2 triangles, instead of mayo. Add some minced veggies and pickle relish to your chicken salad if you like.
Cook up a bunch of chicken tenders in the crock pot, and freeze them to use later in soups, stews or casseroles.
