Shrimp, Mango, and Avocado Salad with Sweet & Spicy Dressing

PER SERVING (about 2 cups): 174 calories, 5g fat, 429mg sodium, 21.5g carbs, 4g fiber, 13.5g sugars, 12g protein -- POINTS® value 3*

Shrimp, mango, avocado... AHHHHHHHHH, IT'S SOOOOOO GOOOOOOOOD!

Ingredients:

For Salad:
8 cups fresh spinach leaves
8 oz. cooked shrimp
2 cups chopped mango (about 2 mangos)
1 cup cubed avocado (about 1 small avocado)

For Dressing:
1/3 cup seasoned rice vinegar
2 tbsp. lime juice
1 no-calorie sweetener packet (we like Splenda!)
1/8 tsp. ground cayenne pepper

Directions:
To make the dressing, combine vinegar, lime juice, sweetener, and pepper in a s mall bowl. Mix well, and set aside.

In separate large serving bowl, combine all salad ingredients. Pour dressing over salad, and toss until all ingredients are coated. Enjoy!

    Sorry, it's Hungry Girl! hehe I always say it wrong! But there is a Hungry Girl website and cookbook...but if you go to the website and sign up, you will get regular emails with updates on products, recipes, etc. It's GREAT!
