Shrimp, Mango, and Avocado Salad with Sweet & Spicy Dressing

PER SERVING (about 2 cups): 174 calories, 5g fat, 429mg sodium, 21.5g carbs, 4g fiber, 13.5g sugars, 12g protein -- POINTS® value 3*
Shrimp, mango, avocado... AHHHHHHHHH, IT'S SOOOOOO GOOOOOOOOD!
Ingredients:
For Salad:
8 cups fresh spinach leaves
8 oz. cooked shrimp
2 cups chopped mango (about 2 mangos)
1 cup cubed avocado (about 1 small avocado)
For Dressing:
1/3 cup seasoned rice vinegar
2 tbsp. lime juice
1 no-calorie sweetener packet (we like Splenda!)
1/8 tsp. ground cayenne pepper
Directions:
To make the dressing, combine vinegar, lime juice, sweetener, and pepper in a s mall bowl. Mix well, and set aside.
In separate large serving bowl, combine all salad ingredients. Pour dressing over salad, and toss until all ingredients are coated. Enjoy!
