Easy Lentils & Sausage Soup!

I have a bag of lentils i'm trying to use up, so I'm getting a bit creative in the kitchen.

Lentils & Sausage Soup

1/4 cup Lentils (70 Cals)
1 cup chopped celery (16 Cals)
1 can sliced carrots (60 cals)
2 tsps Chicken Bullion (10 Cals)
1 1/2 cups water
1/2 cup Jimmy Dean Turkey Sausage Crumbles (70 Cals)
1 tbsp EVOO (120ish Cals)

Sauted celery in oil over medium heat about 15 minutes, add in carrots and any spices you wish.

Add water and lentins, and chicken bullion. Bring to boil, then turn down to simmer and cover pit. I let it simmer about 45 minutes.

Add sausage in and let simmer 5 minutes more.

Allow to cool a bit and enjoy!

    Lentil soup is one of my favourite go-to recipes! I cook mine with parsnips and a chopped up apple. Puree the heck out of it and then add sausage (I use a soy sausage because I'm vegan - but same idea!)

    I love it as well! i try to make it at least twice a week! good stuff :) if your having trouble getting the fiber in Lentils is the way to go!

    I actually ate the whole pot for late lunch and dinner, over a span of a few hours.

    think i'm going to make this tonight for dinner and throw in some kale and also maybe some no yolk egg noodles for some more substance.
