How long does coconut last?

I like to snack on fresh coconut but never finish eating one before I throw it out. I looked online today and several websites suggest that fresh coconut meat in the refrigerator is only good for one week. I guess I should start freezing it.
But, I took some to work today that was from a coconut that I opened last weekend so 8-9 days ago and it looks, smells, and feels just like it did the day I opened it. I don't see any sign that it would not be safe to eat.
Any thoughts on this? Anyone else like to snack on coconut? How long do you store it in your fridge? What would happen to it when it started to go bad so I know what to look for?

Since coconut has anti bacterial properites, it should be fine for awhile. I wouldn't eat it if it smelled or felt weird.0
