1 cup plain flour
1 cup rolled oats
2 large ripe mashed bananas
1/2 cup brown sugar (This can EASILY be halved as they're fairly sweet, so even less calories!)
1/3 cup coconut oil
1/2 cup frozen blueberries (or as many as you like!)
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp cinnamon

NO egg, NO milk and NO butter!! But these are absolutely divine.

12 hole muffin pan, I used patty-pans in it but you could grease it. Set oven to 180 degrees celcius. Combine banana, coconut oil, oats and brown sugar. In a separate bowl combine the flour, baking soda, baking powder and cinnamon. Add dry ingredients to wet and blueberries. Spoon into patty-pans and bake for 15-20 minutes.
AND PRESTO. Amazing fresh out the oven!

I'm sure it would! The original recipe I based this off had wholemeal flour :)

    Hi,

Thanks for a great recipe. I saw these and made them immediately, using stevia instead of sugar. They were delicious. Incredible.

How much stevia did you use?
