Spaghetti Squash

I am new to cooking but my boyfriend and I are a pretty good kitchen team. We are trying to keep things healthy and most importantly interesting! I am looking for a good recipe that uses spaghetti squash as a substitute for pasta. I would love to hear your favorite spaghetti squash recipes!

    I made a spaghetti squash gratin last week, and it was really good. I'm not doing low fat, though, so you might want to tweak it for your own needs. Cook the squash (I did it cut side down in a little water in the microwave, but I usually do it in the oven), till tender, use a fork to remove the strands, caramelize some onions and garlic, put all in casserole dish, add sour cream and shredded cheese, bake at 350 till hot and bubbly. I also added a little crumbled bacon. You could add spinach, sauteed mushrooms, etc. to bump up the veggies.

    spaghetti squash and cheesy sauce (skinnytaste.com)

    cook spaghetti squash in microwave use fork to scrape out strands
    Saute 1/4 cup of onion in 1 tablespoon butter and 1 tbsp olive oil
    add 1/4 cup flour
    add 2 cups skim milk and 1 cup chicken broth
    when thickened take off heat
    add 8 oz reduced fat cheddar cheese blend until combined
    salt and pepper to taste
    add 1 bag of baby spinach and spaghetti squash to 13x9 pyrex pan
    add cheese sauce and mix well
    add 1/4 cup of Parmesan on top bake in 350 oven for 25 to 30 minutes.
    I made this last night and it is scrumptious

    Edit: I use pizza sauce and Kraft Mozzarella with a touch of Philadelphia since that is what I had when I found the recipe the first time. So gooey and yummy and definitely filling!

    Thank you for sharing the link. I have a spaghetti squash that I need to cook and did not know what I was going to do with it. Now I know what's for dinner.

    Also, no matter what you make- ALWAYS bake the squash! Any other way and it comes out too watery and overcooked!

    hey thanks for the tip...what a good idea...never thought there would be a difference between how it was cooked...definitely going to try baking it next time...I do not much like the water squash.

    I made my first spaghetti squash just the other night and learned some lessons! I baked mine at 350 for about 50 minutes drizzled with olive oil face up. I was expecting it to be a little more tender and not as crunchy. I was told by a person that has made it way more to bake them face DOWN and put a little water in the pan.

    All you have to do is scrape it out. I then just used plain tomato sauce and added in sauteed mushrooms, onions, and ground sausage that was preseasoned.
