Olive oil! I actually make sure I have calories left in my diary to accommodate some olive oil, it makes you feel surprisingly full.

I cook with any oil I want, but never butter or margarine. I also don't use coconut oil because it's so high in saturated fats.

In my pantry: olive oil, canola oil, walnut oil, peanut oil

coconut oil, olive oil, sunflower oil, hazelnut oil, grape seed oil. I sometimes use butter or ghee (Clarified butter).

Which one I use depends on whether I need an oil with a high smoke point, the purpose (ie pan fry vs drizzle) and what flavour goes with the dish I'm making.

I like trying out different oils they all have different pros and cons.

Butter, lard (which has more monounsaturated fats than olive oil - just don't get the lard with transfats), coconut oil, and red palm oil.

For cooking I use beef fat, coconut oil, bacon fat and butter. For drizzling I use olive oil, avocado oil, nut oils etc...

    Olive or butter.

Avoid Canola at all costs, also known as rape oil or rapeseed oil. It was only recently okayed for use outside of machine lubrication...

    Avoid vegetable oils.

I have found virgin coconut oil is about the best. MET-Rx creator got me started using it years ago as the best source of MCT oil. It has a lot of health benefits & it is used differently by our bodies than other oils. It is actually a low calorie fat. There is lots of fascinating info on it. I've used it almost exclusively for over a decade.

I use organic butter once in a while. Love the added flavor it gives.

    Depends on the application.

If I'm frying something, then something with a high smoke point.

If I'm making a dressing, then anything that has a good flavour profile (needs to pay the freight).

I'm really liking macadamia oil right now, but can only get it when I get to Hawaii (so I use it sparingly when I have it).
