108 calorie pumpkin banana muffins!

Lately I have been all about low-cal muffins, so here's another post! If anyone remembers the 100 calorie chocolate cupcakes I posted a few days back, apparently these are BETTER! I haven't had more than a bite yet (saving it for dessert), but my roommate and boyfriend LOVED them, and the bite I took was incredible!

Ingredients:
Pam baking spray
1 1/4 cup white all purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground cloves*
1/2 tsp ground nutmeg*
2 very ripe medium bananas, mashed
3/4 cup pureed pumpkin
2 tbsp light butter, softened
1/2 cup white sugar
2 egg whites (or 1/4 cup)
1 tsp vanilla extract


Directions:

Preheat oven to 300°. Put liners in a cupcake pan and spray each one with baking spray.
In a medium bowl, combine flour, baking soda, pumpkin spice and salt with a wire whisk. Set aside.

In a large bowl, cream butter and sugar with an electric mixer. Add egg whites, bananas, pumpkin and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.
Add flour mixture and then blend at low speed until combined. Do not over mix.

Pour batter into cupcake pan and bake on the center rack for 22 minutes, or until a toothpick inserted in the center comes out clean. I set my timer for 16 minutes for the first check and ended up taking them out at 24 minutes.

Let the pan cool at least 20 minutes.

* 1 tsp of pumpkin spice can be substituted for cloves and nutmeg.


I know not everyone is a fan of butter substitutes, but you honestly can't tell. The original recipe called for some different ingredients like whole wheat flour and brown sugar, but I was out of those when I made this, so if you want to try that it might be even better for the same calorie count.
