crock pot recipes?

I'm hopeless and cooking and just got a crock pot. What are your favorite recipes to make in the crock pot?

Just made lamb stew this week. Lamb shoulder, potatoes, celery, leeks, beef broth, parsley, rosemary & bay leaf & curry. Sear the lamb shoulder in skillet w/couple of TBSPS of olive oil on all sides, put in the crock, saute the veg in the pan you seared the lamb in till soft, then deglaze w/broth and pour all in the crock, if needed add water to bring liquid up to 2/3 of the lamb. Turn on the crock for 8-10 hours. I set mine overnight, pour into a cool pot in the AM, set in frig during the day and when I come home I can easily skim off all the solid fats and set on the stove to re-heat I add my salt and pepper here to taste. Add a salad or fruit and bread and you have dinner in minutes and yummy leftovers for lunch the next day. Beef short ribs fall apart in the crock - sear as above, add whatever veg you want\have, cook overnight. Pork shoulder for delicious pulled pork sandwiches. Whole chicken stuffed w/lemons and garlic, add rice for chicken and rice soup. Chili (meat or veg) is delicious in the crock. Just throw everything in and turn it on!! The variations are endless once you get the basic searing down and decide on what meat/veggies you want. I even did my thanksgiving stuffing in mine last year b/c my oven crapped out. You can also do oatmeal in it and wake up to hot cooked oatmeal in the morning. Also keep in mind that the crock pot is designed for larger, tougher cuts of meat so don't try to cook chicken breast, lamb chops or steak in it.0

I make this cream cheese chicken chilie in the crock pot. So good. I have one of the tiniest crock pots so adjust as needed.
1-2 boneless skinless chicken breasts
1 can black beans, drained
1 can sweet corn, undrained
1 can diced tomatoes with green chiles, undrained
1 8 oz block of cream cheese (I've also used soft goat cheese, omg so good)
1 pkg ranch dressing mix (I now use homemade ranch dressing spice mix combo - also makes it better)
1 tsp cumin
1 tbsp chili powder
1 tsp onion powder
Place chicken breast in the bottom of the crock pot. Drain the beans and add on top of chicken, and add corn and tomatoes. Add spices and mix well. Lay block of cream cheese on top (it won't visibly melt). Cook on low 6-8 hours (I prefer the full 8). Mix cream cheese into chili and shred the chicken. Serve!0 -
