...the chicken recipe thread that just won't die.

(Nice timing as my wife said she wanted to try a greek yogurt chicken marinade earlier today.)

I'm going to make this tonight, but mix in a packet of pesto seasoning (and milk?) instead of the other spices. I'll report back tomorrow! Thanks for posting.

I'm going to make this tonight, but mix in a packet of pesto seasoning (and milk?) instead of the other spices. I'll report back tomorrow! Thanks for posting.

The pesto was good, milk and no cheese was not so much. I used almost 4lbs of breast strips and cooked for about 35 minutes at 375 in a glass dish, and the chicken was moist and perfect! I did 12oz plain greek yogurt, 1 packet of pesto sauce powder, garlic, and added 1 cup of milk since the pesto sauce calls for 1 cup of fluid (.75 cup water and .25 cup oil), but managed to derp on the cheese. The flavor of the pesto and yogurt was nice on the chicken, but the sauce was too thin with all of the juice off the chicken as it cooked to be a good sauce to put on rice like I planned. I would suggest just a splash of milk and lots of mozzarella, Parmesan, and feta, maybe some sun dried tomatoes too. Then mix halfway through when the chicken juice has appeared.

This was fast and easy, paired with some rice and roasted asparagus. Will do again with a few tweaks.
