I've recently joined and found this site to be superbly helpful so I thought I would ask the wider world to help me out.
I am allergic to all fish and am trying to find new and exciting ways of cooking chicken. My family will quite happily cook fish and let me fend for myself but I am running out of ideas with this!

I just made this the other day (I've started replacing salt with lime juice in my meat recipes to cut down on sodium and I LOVE it):
1 pound boneless, skinless chicken breasts (3 large breasts)
1 tablespoon paprika
2 teaspoons Splenda Brown Sugar
1 teaspoon black pepper
2 tablespoons lime juice (or squeeze 1 lime)
2 teaspoons extra virgin olive oil
Preheat oven to 375 degrees
Pound chicken to tenderize.
In a small bowl, combine paprika, brown sugar, black pepper, lime juice, olive oil. Mix until smooth.
Coat chicken breasts with paprika mixture, place in baking dish (no need to spray or grease dish - the olive oil in the mixture will keep it from sticking).
Bake 30-40 minutes or until at least 170 degrees internal temperature.

Fat: 4
Protein: 32
Fiber: 1
Sodium: 650 -
