i have some sort of problem with gluten, and since i started meals especially breakfast without it i feel alot less tired and irritable, and can focus much better throughout the day. its kind of hard for me because i was such a cereal fanatic, so my breakfast is mostly oatmeal and a egg, cheese and ham omelette. anyone have any ideas for a bigger menu, and to be more clever? thanks.

You could still eat rice cereal, as rice is naturally gluten free. Or just eat anything you like. Leftovers from dinner, a taco (corn is also gluten free), a smoothie, a bowl of soup... Breakfast doesn't have to be eggs or cereal.0

Chex cereal has lots of flavors with no gluten. Rice flour baking mixes can do pancakes or biscuits. Egg omlet with veggies and ham would be more filling. Maybe a side of bacon. Steel cut oats in the crockpot with some cream and dried fruit is heavenly in the winter.
Or dont eat breakfast foods for breakfast, leftovers from last night, a sandwich, etc are all valid options.0 -

we have been eating a ton of polenta and eggs in the morning.....it keeps you well sated for a really long time
quick cook in the microwave (8-9 minutes) we make it with chicken broth and add poached eggs on top! DELISH also a quick tortilla espanola or frittata with any left over veggies from the night before....0 -

I am celiac so I have to be 100% gluten free.
My go to daily breakfast is eggs, I saute up about 4 cups of veggies (zucchini, mushrooms, tomatoes, avocado, spinach) in a bit of olive oil and garlic and then once veggies are ready I scramble up one egg and 150G of egg whites and cook it all together, and then sprinkle a bit of hot sauce and cheese on.
It is a strong protein for the first kick of the day and keeps me quite full until lunch.0 -

polenta is corn meal - it is super hearty and the creamy version in the microwave is nom nom nom.... you can also buy it in tubes and slice into rounds and brown in some EVOO - some people make it with milk and water and sweeten it up - I don't have much of a sweet tooth so we go savory..... give it a try....0 -
Kay's naturals make really yummy gluten free cereal with protein and low carbs, also gluten free oats for oatmeal with almond milk and whatever other flavorings you like is good0

I just have a lot of fruit!
sometimes smoothie or something just solid.
I normally aim for about 400 calories of fruit for breakfast but most of the time i can only manage about 300 haha!
but yeah ive noticed that although im not celiac i do get tummy aches after eating gluten so im trying to avoid it as much as possible!0 -
Sliced turkey or ham lunch meat in a cupcake pan drop an egg in sprinkle with paprika, salt, and pepper. Bake at 350 for 20 minutes.0

Most of my breakfasts include eggs, bacon, sausages, etc. (usually one/some). I like eggs fried in butter or the drippings from the bacon/sausages, or boiled eggs personally (I'd do omelettes but have a weird thing about veggies in my eggs lol). Try focusing on whole foods rather than just gluten free versions of food, since a lot of those foods have additives you might not be fond of. But really, eat what you like that makes you healthy and happy.0

I usually do a cup of plain non-fat greek yogurt and a half cup of red grapes mixed together and add one packet of Splenda. I have a hard boiled egg and allow myself one cup of coffee.
You could also do cheese grits, Ezekiel bread, sauteed veggies, fruit smooties,
We are also gluten free and I make my children gluten free pancake each morning. I try to also include some kind of protien like flax meal, eggs, or a lean meat to get the brain going.
Good luck! You can do this! It is your chance to be creative!0 -
Tofu scramble is good--It's tofu with turmeric, curry powder, and vegetables. I buy a baby kale and spinach mix to put in mine, as well as bell peppers, onions, and whatever else is on sale in the produce aisle Here's a basic recipe: http://vegetarian.about.com/od/tofurecipes/r/Easy-Tofu-Scramble.htm0

My niece makes this Brussels Sprout hash with egg and it is so good! I never really liked brussels sprouts but I love this. I would make it myself more but I'm lazy and it does require some prep.

Bacon and mushrooms
Ham and tomatoes
Smoked fish - add to rice and peas for kedgeree
Greek yoghurt and berries
Fruit salad, half a grapefruit, smoothie
Overnight oats/ Bircher muesli. Soak oats in fruit juice in the fridge, in the morning add a grated apple, nuts seeds, yoghurt, endless variations. There's lots of pretty pictures of "refrigerator oatmeal" on Pinterest etc.0
