Mini Muffin Tator Tot Casserole

Pre-heat oven to 350

9 Tbsp Egg Beaters
1/4 cup nonfat milk
1/3 cup of Reduced Fat Shredded Cheddar Cheese
24 Tater Tots
2 Tbsp Bacon Bits
salt and pepper to taste

-In a small bowl whisk together egg whites, milk, salt and pepper
-Spray mini muffin pan with cooking spray
-Place 1 Tater Tot in each cup
-Pour egg mixture over making sure not to over fill
-Sprinkle with cheese and bacon

Bake at 350 for 13-16 min. or until cheese is bubbly and slightly browned.
Let cool slightly before removing from muffin pan and enjoy!

    not gonna lie....i ended up eating all 24 for dinner last night. was only about 600ish calories though. be warned these are dangerously good! lol

    How is this a casserole? It's more like a bastardized mini fritatta without any of the flavor
