I was wondering if anyone had a good, easy cheesecake recipe they could share. I am planning to sub fat-free cream cheese for regular cream cheese and truvia for sugar in any recipe. I absolutely love cheesecake and I really miss it since I've been counting calories.

    Low Fat Strawberry No-Bake Cheesecake
    Gina's Weight Watcher Recipes
    Servings: 8 • Serving Size: 1 slice • Points: 5 ww pts
    Calories: 233.5 • Fat: 9.6 g • Protein: 3.1 g • Carb: 29.9 g • Fiber: 1.5 g

    * 8 oz Cool Whip Free
    * 8 oz 1/3 less fat Philadelphia Cream Cheese
    * 9 inch reduced fat Graham Cracker Crust
    * 1/4 cup sugar
    * 2 tsp vanilla extract
    * 12-14 strawberries, hulled and halved lengthwise

    In a large bowl, whip cream cheese, vanilla extract and sugar for a few minutes until fluffy. Add Cool Whip and whip until smooth. Spoon mixture into pie crust and chill for a few hours, until firm. Arrange strawberries on top and serve.

    this is my go to no-bake cheesecake rexipe and it is super easy and super lowcal.

    1 reduced fat graham cracker crust
    1 tub cool whip free thawed
    1 8oz pkg fat free cream cheese (room temp)
    1 can of "lite" cherry pie filling

    Beat cream cheese and cool whip together and place in pie shell. Top with cherry pie filling and you are done.

    serves 8
    200 calories per serving

    Ingredients:
    1 lb cream cheese; fat-free
    1/2 c splenda
    1 ts vanilla (I like vanilla so I'd use about a tbsp)
    2 egg white
    4-5 large graham crackers crushed
    apple juice


    Preparation for Low Fat Cheesecake Recipe:
    1. Lightly spray (PAM) 8" round pan.
    2. Blend crumbs w/1/4 c. apple juice.
    3. Pat into bottom and on sides of pan.
    4. Combine cake ingredients (no need to beat whites sep); pour into shell.
    5. Bake for 30 mins in preheated 350o oven.
    6. Chill well - hardens as cools. (Keeps for several days, freezes well)
    Preparation Time: 5 mins
    Cooking Time: 30 mins

    I like frozen blueberries on top!

    Jello makes a sugar free cheesecake flavor pudding, which I think it pretty yummy. They also make tiny graham cracker pie crusts, usually 4-6 in a pack. These make great mini treats! Even better with fat free cool whip and a few slices of strawberries.

  • You could make a cheesecake with no crust (I do this in a silicone muffin tin) and crumble a little bit of Graham cracker with it on the plate. The cheesecake itself is not that bad compared to some other desserts!

    Does anyone have a sugar-free one (meaning the crust is sugar free as well?) Or better yet sugar free pumpkin?
