Lentil Taco 'Meat"

This is so good. My beef/chicken/turkey loving family loves it as well. 
Lentil Taco/Enchilada filling:
2 cups Green Lentils
Frontera Enchilada Sauce, Mild Red Chile
Chili Powder (salt-free)
Cumin
Olive oil
Kosher Salt
Rinse and cook Green Lentils according to package directions in water with 1 Tablespoon Olive oil and 1/2 teaspoon salt; just to al-dente (little less than done). Return to pan/pot.
Add Chili Powder and Cumin to taste (I usually add ~ 2 T Chili powder and 1 t Cumin.
Add Frontera Enchilada Sauce (or other sauce, it's forgiving) with a few T of water and simmer for 10 minutes.
Done!
I usually serve this with corn tortillas, roasted peppers, avocado and sour cream.
