    Vinegar
    Olive oil or sesame oil if I'm going for an Asian flavour ( only need a tiny bit)
    Low salt soy sauce
    Chilli to taste or cracked pepper depending on the dish
    Star anise or Chinese 5 spice

    I just use all different combinations of those.

    I agree with the calorie comments for Olive oil. I try to get at least a tsp a day just for the health benefits. If I go over because of it I just accept it or do a little more exercise if it worries you.

    Here's a dressing that goes nicely with chicken on a salad.

    Sear a boneless chicken thigh "with the skin." Start skin down on hot pan so that no oil is needed. After cooking, remove the chicken skin and discard, then set aside chicken to rest.

    Take 1 tbs on the drippings and let cool a couple minutes, then take 1 tbs of creme fraiche or sour cream and mix with drippings. Add salt and pepper to taste. Should make 2-4 serving, you don't need a lot since it goes with chicken on a salad.

    Cut chicken and place on top of salad (I like spinach and arugula). Drizzle dressing over.

    Enjoy.

    1/4 cup plain 0% Greek yogurt
    1 tbsp minced shallot or onion
    1 tbsp fresh lemon juice
    1/4 cup fresh herbs
    Salt & pep

    *************************************

    Tangy Asian orange dressing

    4 oranges
    1 lime
    1 egg white
    2 tbsp sesame oil
    1/2 cup white wine vinegar
    1 tbsp sesame seeds
    1/4 tsp salt
    1/4 tbsp raw honey & pepper to taste

    *********************************

    1/2 cup Greek yogurt 0%
    1-3 tbsp organic or raw honey
    1-3 tbsp grey poupon mustard
    2-3 tbsp apple cider or white wine vinegar
    1/2 tsp evoo
    Sea salt to taste

    Yummmmmmmmm.

    English mustard and low/non-fat yoghurt. About 3 parts yoghurt to 1 part mustard mmmm. Goes really well with leftover pork!

    Little bit of olive oil, water, vinegar, salt, pepper, and sometimes I put light honey mustard in there as well. Also love making dressing with greek yogurt (I find a lot of my recipes on yummly!).

    I like a blend of lemon juice and beet juice on my salads -- I just sprinkle them on, but you could mix in batches and add seasoning to make a "real" dressing.

    Either simple:
    - olive oil, balsamic vinegar (the good stuff), pepper, salt and a herb mix (rosemary, thyme, basil)
    - pumpkin seed oil (the good stuff) with a mild vinegar

    or a bit more complicated,
    - olive oil, balsamic vinegar, honey, sweet mustard, salt, pepper and a herb mix (rosemary, thyme, basil)

    Squeeze some juice off a ripe mango, add lime juice, olive oil, salt and pepper.

    Herb infused oils are my favorite. I use olive oil, but canola oil will work fine too. In a glass jar, pour 1 cup of olive oil over 4 garlic cloves (quartered) and a sprig of rosemary. Heat in microwave on 30% power for 2 min. The idea is to warm the oil, not fry the herbs. Cover, herbs and all, and let sit overnight.
    You can use this paired with vinegar or lemon juice for a salad dressing, you can also use it to coat your veggies before roasting.

    You can use herbs other than garlic or rosemary, but this is my favorite.

    I make all my own dressings and rarely buy or use pre-made. When I do, though, I really like Bolthouse Yogurt dressings in the veggie aisle.

    I make mine "french style" by pouring my ingredients in the bottom of my salad bowl, whisking and then adding my salad greens. Saves a dish and I think it covers better from the bottom. My stand-by is balsamic (trader joes moderno), EVOO, crushed garlic and salt and pepper. I also add blue cheese crumbles to that and walnuts, or I add shaved parm. You can also add mustard, use fruit vinegar, add fruit, etc. I also buy all my Romaine at Trader Joes in the three pack - organic for 2.99. Last a really long time in the frig.
