Super Easy Spicy Acorn Squash Bisque

Spicy Acorn Squash Bisque
Serves 4

Ingredients
2 large acorn squashes
3 cups chicken broth (or enough to produce desired soup consistency)
1/2 cup cream
3 teaspoons curry powder
1/2 teaspoon salt

Directions
Slice both squashes and roast for about 30 minutes at 400°, or until tender. Let cool, then gently peel the rind away.
Throw the squash pieces in a blender or food processor and add remaining ingredients. Add stock according to how thick or thin you want the soup to be. Add curry powder and salt to taste.

    This sounds delicious!! I'm on my way out to the store right now and I'm going to pick up an acorn squash and give it a try! I love pumkin soup, and it sounds very similiar (except for the curry powder, which sounds like it'll give it a nice "kick"!). I may leave out the cream, as the blender seems to do a great job at making soups creamy! Thank you for posting the recipe!

    BTW, is the nutritional info per serving? So 1/4 of the soup the recipe yields is 202 cals? I can't wait to try it!

    Going to make this today. What a perfect fall soup! I love curry too so I'm especially excited to try it. I too will be using vegetable stock. :)
