How do I make my recipe "lighter" and still taste good?
I bought the Krusteaz Pumpkin Spice baking mix. I want to bring muffins for a luncheon tomorrow. The recipe calls for eggs and vegetable oil. I heard you can substitute apple sauce for one of those, but which and how much? Also, can I use egg whites instead of whole eggs? I want to make them good, but lower calorie and fat content.

You can use egg whites instead of eggs. I can never usually tell the difference. You can substitute applesauce for the vegetable oil, but I don't usually like the consistency when I do that. You could try greek yogurt for the oil also - I've had more success with that. You could make it a diet soda muffin. Use the baking mix and a can of diet sprite - mix it up and bake. Bring a little whip cream for the topping - that is yummy. You can also forgo the eggs and oil and use a can of pumpkin.

Flax egg instead of using regular egg. You can use applesauce, greek yogurt, or coconut oil in place of the vegetable oil.0

are the substitutions a 1 to 1 ratio? IE: 1/4 cup vegetable oil = 1/4 c applesauce, or 1/4 c greek yogurt?0

applesauce is 1 to 1, greek yogurt is a little less: 1 to 0.75
