Low calorie Stew Recipe??

Does anyone have a yummy low calorie stew recipe?? I'm craving it so bad, but don't want to blow my nutrition.

  • Shrimp and Fish would probably be the lowest. you can use the Knorr chicken broth cubes for flavor, maybe add cabbage, celery, cilantro, and other veggies you like. We call it Caldo de Marisco and it's what I've been craving since 2 nights ago. yumm.

    * 2 tablespoons olive oil
    * 2 medium onions or 300 g, sliced
    * 750 g lean beef, cut into cubes
    * 3 cloves garlic, crushed
    * 1 teaspoon ground turmeric
    * 1 teaspoon ground coriander
    * 1 teaspoon ground cumin
    * ½ teaspoon ground black pepper
    * 5 tomatoes or 700 g, peeled and chopped
    * 2 cups water or 500 ml
    * 1 bay leaf
    * 2 cubes MAGGI® Chicken Less Salt Bouillon
    * 1 medium potato or 200 g, cut into cubes
    * 3 medium carrots or 300 g, chopped into cubes
    * 1 stick celery, sliced
    * 1 small eggplant or 150 g, cut into cubes
    * 2 tablespoons fresh parsley, chopped

    Fats : 29.00 g
    Protein : 33.00 g

    Here's a recipe that I made up when I had a bunch of squash I needed to use up. It's pretty basic but turned out really well. My family has asked me to make it again!

    Autumn Stew

    1.5 pounds stew beef
    3 c. winter squash
    1 c. parsnips
    30 baby carrots
    2 c. vegetable broth
    Seasonings to taste

    Cut up and cook slowly until done. Serve with low-fat dumplings.

    Serving Size 336 g (1 1/2 cups)

    2 cups of plain flour, all purpose + 5 tsp baking powder (omit baking powder if you have self-raising flour)
    2/3 cup of milk
    1 tablespoon of butter or margarine
    salt
    pepper
    Optional - some herbs, such as a little parsley or thyme.

    Works whether your have a pan on the stove, or a stew pot or a dutch oven.

    1. Put all ingredients in food mixer and mix until it forms a single clump
    2. Break into about 1 inch pieces, from into a ball and then press a little flat so they are about 1/2 inch deep.
    3. Drop them into your stew
    4. Put a lid on
    5. Leave alone for 15 minutes.
    6. Serve

    (Note: I just mix these up by hand and drop them into the stew--I make 12 out of this recipe and that is what the calorie count is based on.)
