Healthy eating at college?

I live in the on campus apartments, yet we are still required to have a meal plan. My plan is 5 meals a week in the dining hall and I get $350 a semester to spend at the other places. I eat breakfast and snacks in my room and I've gotten into the habit of cooking for myself instead of using my meal plan... which is a total waste of $1300.

I just hate eating in the dining hall because I can cook chicken breast, green beans, and potatoes for myself and have it come up 150-200 calories less than an identical meal in the dining hall! It's so frustrating to me. That's even when they have healthy options. By default, there is a burger station, pizza station, and sandwich station, and a salad bar. I get salads a lot but the only protein they offer is chickpeas, which I dislike, so I usually get something else too. We have one station that is always something random- and it's a real bummer when that random choice is fried chicken or something like that.

As frustrating as the dining hall is, I can deal. My main problem is spending $350 at the other places. That money does not roll over and you are not allowed a refund... and I still have $200 left to spend this semester. It's November. You see my problem! The only options are a coffee shop where the only food items are sweets, this Mexican place (but I hate Mexican), sub connection, and Sandella's Flatbread Café.

My issue with sub connection and Sandella's is that it's SO MUCH BREAD, SO MUCH SALT. The subs are ok though but Sandella's is terrible... everything on their menu comes with a flatbread that is 200 calories alone... the lowest calorie option is 420 and it's not that filling at all. At least the subs are filling! But I HAVE to use this money. I can't let it go to waste! They do sell fruit cups and yogurt which I buy, but I want something a little more substantial for meals.

So I guess I am just looking for your suggestions for these places. It's hard for me to eat these higher calorie but less filling meals because then I have to skip snacks or something and then I just want to eat because I get hungry and it messes up everything. My school does try. They post calories for most things in the dining hall and they like to talk about how Sub Connection and Sandella's are healthier options... but I can do healthier by myself.

I'm just freaking out trying to be healthy but knowing I have a ton of money I need to use up in one month.

I struggle with the same exact situation at my school! It's not fair that we have to have a meal plan full of unhealthy options!! However, if the workers at Sub Connections are nice, you could ask for some extra chicken or turkey instead of the bread. (or just pay for extra chicken, and say you don't want the bread since you have a ton to get rid of quickly) I have found that if I just let people know that I am trying to be healthy, they are usually pretty flexible on things like that. However, I basically just eat chicken on campus... ALL the time. It gets boring, but it's working. Also, you should cut coffee (unless it's black with low cal sugar packets) and switch to ordering green tea.. For upstairs.... in order to take in less calories, but still get full off of the salad bar, maybe you could cut salad dressing. I know, it sounds gross. But, if you leave off salad dressing and put stuff like tons of cucumbers, it is still "edible", much more filling, and way fewer cals. Those are just a few of the things that I have been trying, but it's definitely a struggle on any college campus.

You said "but I can do healthier by myself." Look at the food from the cafeteria & Sandellas as FREE food, since you've already paid for it. Just pick & choose wisely, and combine it with some of your healthy home foods for new combinations.
Get creative with your combos. think outside the box.

Buy some tupperware. Buy some zip-lock baggies (both at the dollar store). Freeze a couple of water bottles.
Then buy a cute little insulated-quilted lunch 'hand bag", and you are ready to rock !

How about cook a bunch of chicken at home, just the way you like it, portion it into zip-lock baggies & freeze them.
Bring 1 portion to school, and add to the school cafeteria's salads.
Bring some peanut butter from school ~ eat with apple slices from Sandella.
Bring some chopped almonds from home ~ add to yogurt from school.
Bring some hummus from home ~ eat with veggies sticks from school.
Focus on lean protein & fiber. And a little fat is ok. These will keep you full & satisfied (unlike processed bread & sugars)
Get school's/Sandella's 'free' fruits & veggies & hardboiled eggs, and take home & make something else. Get creative.

Sandellas' menu doesn't look too bad ... http://www.sandellas.com/menu.htm
Who cares if everything comes with flatbread at Sandellas. well, who says you have to eat flatbread, just because it's on your plate ! or get a wrap & eat only 1/2 of the tortilla. go easy on the sauces/cheeses.
(ie since you've consumed less wrap / bread / sauce / cheese, you have extra calories to enjoy on something else !!)
get a yogurt/fruit for a snack later on.

got a craving for some dessert ? eat only 1/2, and add some nuts or fresh fruit to it. you'll be eating only 1/2 the processed sugar & carbs. and substituting some really healthy nuts & fruit with lots of nutrition ! it's a win win.

Scroll thru these, and see if you can re-create something similar with components 'already paid for' with your meal plan.

Here's a great tip from my friend.. to consume less salad dressing calories, but still enjoy the flavor:
Don't pour dressing on salad, but put in seperate container.
Then dip the tip of your fork prong into the dressing, then spear some salad goodies. You'll get abit of dressing in with every bite, and it will taste great. and will consume much less dressing that way.
