looking for low carb advise and friends

I have developed a serious addiction to carbs so I am changing back to the low carb way of life. I stuck with the atkins plan for 6 1/2 years and only quit because I started gaining weight and didn't know why. I would really like to hear suggestions on the best way to get started again and hear some meal plans from others. I would really like to hear from some veterans on what they ate starting out and then through the other stages of low carb eating.

I also did Atkins when I was younger but you cut all carbs out which is not good you have to have some, just not ones that spike your glucose. At this point I have lost 40 Lb. on MFP but hit a roadblock. So cutting back on Carbs by the following:
Breakfast: One whole egg whipped in pan with Pam. Pour in and then add onions, red, yellow and green peppers. After one minute on med high turn and you have a delicious omelet. I add no salt and no pepper but sometimes sprinkle 2 or 3 drops of hot sauce on it the punch is very good with eggs.
Lunch: Whole wheat tortilla , take half and lay in same pan you did the egg in . You do not need any more oil. Lay low sodium turkey in and sprinkle low fat cheese on top. When the cheese starts to melt, turn over and you have a delicious lite calories low carb low sodium sandwich . I add on the plate half apple, some carrots, some cherry tomatoes Beautiful healthy lunch and holds you till dinner
Another option for lunch: Lettuce wrap, add low sodium turkey, Eat like a sandwich. I also take carrots, broccoli, and tomatoes and eat on the side with 1 tsp. ranch dressing for dipping.
