What is the purpose of olive oil in salad dressings? Can you leave it out or put less in?

It is satiating and delicious? Plus you need dietary fats. If you left it out you would have infused vinegars.0

My new favourite thing to put on my salads and chicken is mint sauce, as in the kind that usually is served with roast lamb ... sounds very weird but I find it gives a lot of taste for only a small amount! Also doesn't have any oil in it if you are worried about that.0
