Lentil Hummus

I don't cook much, and this is my first recipe post, so here goes:

I made a goal this month of NOT grocery shopping until we are out of options for food. The idea is to clean out the freezer and pantry, which have been stuffed with food we don't even know we have. I found a bag of dried lentils, found some recipes on the internet, and modified them to suit my diet.

I should add that I could not stand the taste of lentils when I first had them. That's why the extra bag was still in the pantry. This recipe worked well for me, I hope someone else likes it too!

1 pound dried lentils
3 tsp minced garlic
1/2 cup plain fat-free Greek yogurt
2 tbsp. balsamic vinegar
Salt to taste

Boil the lentils until soft, about 30 minutes. Drain and rinse, add to blender (food processor might work better, I don't have one) All all other ingredients, blend. It's easy!

    I divided this into 8 servings, about 165 grams each. For one serving:

    138 calories
    0 fat
    17 grams protein
    34 grams carbohydrates (18 grams fiber)
    33% DRV of iron - added bonus

    nice! i usually make humuus with chickpeas but lentils are easier on the tummy and cook faster. what kind did you use - green, black, red?

    I used green, but the recipe I modified called for red. I bet any one would work.

    Thanjs,. Red just tends to really disintegrate while green hold their shape more

    That's because it doesn't exist. Hummus = chickpeas. This is lentil "dip." Looks yummy though. Just rename it please, for the love of languages...
