low calorie lunches?

I have the following in my fridge:

Carrots, onions, garlic, small potatoes, 2 leeks, cauliflour, broccolli and chillis. I also have herbs, curry powder, paprika, pasta, spaghetti, rice. I would like to batch make for the week ahead but lost inspiration.

    take all the veggies (maybe not the chillies but you could) and some stock = brilliant soup

    take most of the veggies (maybe minus the potatoes) add herpbs and chopped tomatoes from a tin = nice casserole

    take a lot of the veggies + a whole lot of eggs and some milk = lovely frittatta

  • Vegetable curry with potatoes, carrots, cauliflower, onions and garlic). Saute onions and garlic. Add in a can of tomatoes (if you can get some). Add 1-2 tbsp of curry powder and some cayenne pepper or red pepper flakes. Serve over rice.

    Carrots, onions, garlic and leeks, you can make a veggie stock. Then take 1/4 cup rice, sautee it in 1tsp olive oil with onions and garlic, gradually add the veggie stock as you constantly stir (tldr: make a risotto out of the rice and stock) roast the cauliflower and brocolli to top the risotto :) this makes 1 serving.

    Roast potato with oliveoil, garlic and herbs, preferably rosemary yumyum!

    Thanks for all your replies. Im loving the casserole/stew idea. I dont like tomatoes but use passata when making a provencal and it doesn't taste tomatoey because I slow cook it with the beef. Would it taste tomatoey if I put a carton of passata in?

    I don't think it will be very tomatoey as long as you add enough other things that taste of something (like herbs and spices) you could also add some stock for added flavour, or use just stock and then maybe some corn starch to thicken the sauce if it hasn't gone down enough from slow cooking

    I suppose I could even make a veg bolognese
