Need some potato recipes!

I bought a huge bag of potatoes a while ago (they were majorly on sale, don't judge me) and now I don't know what to do with them all! I've had baked potatoes galore and I'd like to get a little more creative.

Anyone have healthy recipes that use potatoes? Like.. a lot of potatoes? I live by myself so it's just me trying to eat them all haha.

    Mashed potatoes with salmon or chicken.
    Boil them
    Make oven potato wedges/fries
    potato salad (low-fat mayo or with greek yoghurt)
    Sheperd's pie
    casseroles

    I love sauted red russell potatoes and adding some chopped zucchinis in there. :)

  • I toss wedges in a little EVOO & Kraft shredded parm, asiago & romano cheese. Throw on a cookie sheet and bake. Super easy & tastes awesome.

    Something else I've tried & really like is mashing them w/ some danon oikos greek french onion dip. Adds a ton of flavor & it's only 25 cals for 2 TBSP. :smile:

    Latkes:

    Grate 2 potatoes (squeeze ALL the water out of them with cheesecloth or something similar)
    Add 1 egg
    Add chopped onion to taste (generally one small yellow or half of a large)
    Salt and pepper

    form "pancakes" and fry in canola oil on both sides until golden brown.
    Serve with applesauce and/or low fat sour cream.

    Yum.

    Makes two HUGE servings

    Generic - Baby Red Potatoes (Diced), 3 Cup
    Spices - Parsley, dried, 1 tsp
    Spice World - Garlic Powder, 1 tsp
    Spices - Pepper, black, 0.25 tsp
    Celery - Raw, 0.5 cup chopped
    Grimmway Farms - Cut & Peeled Baby Carrots , 3 oz
    Kraft - Philadelphia Cream Cheese 2 TBSP
    Kitchen Basics - Original Chicken Cooking Stock, Less Sodium, 8 oz.
    Blue Bonnet - Light Butter Spread, 1 tbsp
    Gold Medal - Unbleached All-Purpose Wheat Flour - White, 1.5 TBSP
    Silk - Almond Milk - Unsweetened Originial, 0.5 cup
    Kentucky Legend - Ham Steak (cubed)
    Onions - Raw, 0.25 cup, chopped
    the Spice Hunter - Celery Salt Blend, 1/4 tsp.

    Hi, I´m from the land of potatoes, Wielkopolska region in Poland, where potatoes are called ´pyry´ (pronounce pI´rI -the vowels like in the word ´lyrics´), and I can recommend you a very simple, cheap but nutritious dish called 'gzik´. All you need is 1.potatoes (boiled unpeeled), 2.cottage cheese, 3.onion, 4.natural yoghurt 5.Sunflower oil, salt and pepper. While the potatoes are boiling mash the cheese (you can use a fork) in a bowl adding some yoghurt, chopped onion,salt and pepper. Mix everything and serve with potatoes. You can pour some oil on the potatoes - just a little bit for a better and more ´velvet´ taste. Bon appetit :)

    Dont forget potato and leek soup, potato scones(or farls depending on whether you are scottish or irish). Potato salads are nice, as are duchess potatoes (and you can freeze them too) :)
