Broccoli Salad

Before I was counting calories, I made this ALL the time. I would eat the entire bowl I made, only I made it with sugar, full fat mayo, and bacon.
Here is a simplified version that is low calorie, I well tell you the brands I used, because yours could be different!

3 cups of raw broccoli (I bought 3 large broccoli crowns)
1/4 onion diced small
1/4 cup of Kroger raisins
1/4 kraft mayo made w/olive oil
2 tablespoons of Kroger white vinegar
4 packets of Truvia

Mix together the mayo, vinegar, and truvia for your dressing. Pour over top your broccoli, onion, and raisins and stir. Make sure you stir this once every few hours to get everything combined well.

Make this about 12 hours before you are going to eat it. I like making it at night before bed and letting it sit in the fridge all night.

I can eat a whole bowl of this, so I made my nutritional info for only 4 servings.

    what is truvia? your salad sounds awesome and I just bougt some broccoli heads!

    Does sound good, but I'm not sure what Truvia is either!
  • Truvia is a sugar substitute, like Splenda....it's all natural :)
  • Yummy! I love the full fat version of the salad, so I'll be trying this one. I love truvia, so much better for you than Splenda.

    By the way, I have some nice, lean bacon. If I wanted to add that would I do it before I put it in the fridge or just before I serve? It probably gets soggy if you leave it in the salad.

    Instead of Truvia, also try honey and balsamic vinegar. It requires even less mayo.
  • You can also make the salad using broccoli slaw, dried cranberries, red onion and a slice or two of crumbled center cut bacon. Really good!

    I decided to make this tonight, and it was really good! Even my husband ate it and he is not a broccoli fan.

    You can also substitute grapes (cut in half) for the raisens.
