Spicy Carrot and Lentil Soup

Just made a cracking soup that was amazing. The recipe came from the British Heart Foundation healthy eating app. It was so tasty and is mega low cal.

It serves six and took less than 30 minutes to prepare/make.


Ingredients

2 teaspoons vegetable oil

1 onion, finely chopped

2 sticks celery, finely chopped

2 carrots, coarsely grated

55g (2oz) split red lentils

1 teaspoon ground cumin

1 teaspoon ground coriander

850ml (1.5 pints) vegetable stock

Freshly ground black pepper, to taste


Instructions

Heat oil in a saucepan. Add onion and celery and cook until soft, stirring.

Add carrots, lentils, cumin, coriander, stock and black pepper. Stir to mix.

Cover, bring to the boil, then simmer gently for 15-20 minutes or until carrots and lentils are soft, stirring occasionally.

Blend with a hand blender

Serve

    I added it in as a recipe and it came out at 58 calories a serving

    Yeah would probably work with a potato masher if you didn't have any blender. We used the hand blender as you can just bung it in the pan.

    I made this soup tonight! it was so yummy! and yes you can use a normal blender I just did! thanks for the recipe seamatt its definately worth Keeping!

    Just wanted to add, it's one of those soups that tastes even better the next day. Had some for lunch today and it was so good I had a double portion......I can live with the calories LOL

    Just a little time saver for people, I made it again today and didn't bother grating the carrots, I just chopped them up small and it worked fine, and saved some grater time.

    Hi - Just pointing out that the lentil quantity in your recipe looks like 55g cooked weight of lentils, not 55g dry weight (which is what you used in your recipe).
    There is Tesco Red Split Lentils (Uncooked) from Tesco in the database, you should use 55g of that instead.

    Just made this for lunch and it was yummy. My servings came out to 75 calories each. I used only 1 teaspoon of oil and 55 grams of dry red lentils totalled 157 calories plus the addition of a left over half of a sweet potato. Thanks again.
