ARGH! Carrot overload!!!!

I made the school girl error of ordering my shopping online by uploading my previous receipt from the supermarket when I accidentally ordered 2 x 2.5kg bags of carrots.... and ordering 2 x 2.5kgs again!

What can I do with them?! lol

    Cut them in quarters about 4 inches long. Put in baking dish. Add 2- 3 tblspoons honey, a few pats of butter and some fresh parsely, add a little water - cover and bake at 350 til tender. Delish!

    This, but with thyme and black pepper instead of parsley. caramelised roasted carrot goodness :)

    I currently have way too many carrots in the fridge too!

    I think I am going to make a carrot soup. That way I can freeze the leftovers.

    I've boiled carrots till they are semi soft, then drained the water and tossed with with honey and fresh rosemary and roasted them in the oven :) so good.

    these are some good carrot recipes!

    we got a whole bunch of carrots from our garden and a neighbors garden this year, so we sliced them and used our foodsaver machine to suck them up and freeze them. Now ive got fresh carrots for all my potato, beef, etc soups this winter

    Freeze them for use in soups, etc. over the winter. Clean, peel and cut into small pieces. Blanch for 2-3 minutes, cool immediately. Put them in freezer bags, removing as much air as possible.
